MACHACA

Marinated beef

It s marinated beef or pork that is rubbed with spices, pounded, dried, and shredded similar to beef jerky. It is a typical dish from the north of the country and is regularly served with eggs.

MEMELAS

Variant of the tortilla

It is a variant of the tortilla but more elongated and slightly thick. It is toasted on a hot comal, spread with asiento (pork lard), and topped with refried beans, crumbly cheese and sauce, either green or red.

MENUDO

Stew made of beef

It is also known as mondongo or pancita and is a stew made of beef tripe (stomach lining) various spices and chili and said to cure hangovers. It is accompanied by spicy red sauce, oregano and tortillas.

MEZCAL

Distilled beverage

It is a distilled beverage produced from the fermented juices of the cooked agave plant core. The word "mezcal" literally means "roasted agave. It is served with worm salt and is produced in the states of Oaxaca, Durango, Zacatecas, Nuevo León and Tamaulipas.

MICHELADA

Beer-based cocktail

It is a beer-based cocktail and there are many versions, the simple beer, lime, and salt or the classical made with lime, hot sauce, Worcestershire, and often tomato (or Clamato) juice, all served over ice in a glass with a salted rim.

MIXIOTE

Wrappe meat

The Nuahuatl-derived term "mixiote" refers both to the parchment-like film or membrane obtained from maguey leaves and to the dish prepared by wrapping meat in this parchment and cooking it by pit roasting or steaming. Common varieties include mutton or rabbit. However, the dish can be prepared with any variety of ingredients, including beef, pork, chicken or fish and the sauce is made from various chili peppers and herbs. It is a dish from central Mexico.

 

MOLE

Highly seasoned sauce

It is a highly seasoned sauce made from chilies and spices, as well as tortillas, bread, chocolate and many other ingredients. There are many types of mole, only in Oaxaca there are seven and each of them is prepared in a different way. Its origin dates back to the 17th century and it was also created in a convent in Puebla.

MOLE DE CADERAS

Broth of the hip and backbone of the goat

It is a broth that has green tomato, tomato, avocado leaves and chili peppers but the main ingredient is the hip and backbone of the goat. It is difficult to prepare and it is only eaten in October and November in Puebla.

MOLE DE OLLA

Broth with beef

It is a soup or broth with beef, different chilies and vegetables. Bone-in beef is often used, and pork is sometimes used as well. It also has aromatic herbs and is typical of the State of Mexico and Hidalgo.

MOLLETES

Bread roll topped with refried beans

It is a halved bolillo bread roll that is topped with refried beans, cheese, and tomato salsa. There are some variants in which chorizo, ham or slices of poblano pepper are added, among other ingredients.

MOSCO

Sweet fruit liqueur

It is a drink that comes from the State of Mexico and consists of a sweet fruit liqueur. Despite its sweet taste, it has a high alcoholic content, so it must be drunk in moderation.

MÚEGANO

Candy made out of flour

It s a type of candy made out of flour, honey, milk, egg, sugar and wafers. This dessert is made with balls of about 10 cm in diameter that are composed of small squares made with wheat flour and covered with caramel, which is what makes all these small parts stick together. It is very popular in San Luis Potosí, Puebla and Tlaxcala.
