WHAT TO EAT IN CABORCA

In this town you can enjoy typical Sonoran food.

Among the most iconic dish is the roast beef accompanied by a huge flour tortilla and frijoles de olla.

You can also taste machaca burritos and caldo de gallina pinta (a slow-simmered soup richly flavored with fork-tender beef, beans and hominy).

When you visit the downtown, be sure to try the coyotas (stuffed cookies), one of the typical delicacies. There are different flavors but we can recommend German chocolate or caramel.

Coyotas Recipe

Ingredients for dough:

  • 1 kilogram of flour
  • 2 tablespoons of baking powder
  • 2 piloncillos
  • ½ kilo of lard
  • ¼ liter of water

Ingredients for filling:

  • 4 ground piloncillos
  • 5 tablespoons of flour

Directions:

Mix the flour with the baking powder and butter. Stir everything together with your fingertips until the mixture is well blended. The two ears dissolved in water are added.

Everything is kneaded and small balls the size of a Castilla nut are formed and round tortillas are made. In the center you put the filling that can be the chosen flavor and cover that tortilla with another tortilla, pressing both parts very well.

Slit the edges with a fork and place them on a baking sheet. Put in a preheated oven at 200ºC for approximately 15 minutes or until well cooked.
