WHAT TO EAT IN MALINALCO

Perhaps the ingredient that defines Malinalco's gastronomy is the trout.

It is prepared in various ways but the one you should not miss is the Malinalco-style trout, which has rajas, tomato, epazote and onion.

If you like gastronomic adventures you can try iguana in caldillo, frog and axolotl in tamale, as well as various armadillo, rabbit, wild boar and opossum stews.

In Malinalco you will find a great variety of traditional ice cream made with regional fruits such as coconut, soursop, nanche, mamey, pineapple, zapote and tamarind, although there are also more exotic flavors like tequila and coffee.

Gastronomy and typical cuisine in Malinalco

Malinalco Style Trout Recipe

Ingredients for 4 servings:

  • 4 trout well washed inside and out and completely dry
  • 2 manzanos peppers, without seeds and cut into strips
  • 10 epazote leaves
  • ½ small onion sliced thinly
  • 8 tablespoons of olive oil
  • 1 banana leaf
  • salt to taste
  • pepper to taste

Directions:

Cut the banana leaf into four rectangles, the size needed to wrap the trout.

Place each trout on a sheet and season with salt and pepper. On top, put the chile and two or three epazote leaves, the onion slices and two tablespoons of olive oil.

Wrap the trout and tie it with a banana leaf.

Put the baking tray in a preheated oven at 180ºC between 25 and 30 minutes.

The fish can also be cooked on a spit (or rotisserie), only in this option you would have to wrap them first in the banana leaf and then in aluminum foil.
