WHAT TO EAT IN CUAUTLA

Among its typical dishes are green and red guaxmole (stew that is prepared with gourd seeds).

Other iconic delicacies are: tamales de ceniza (ash tamales), chumiles (small edible insects), tortitas de flores de colorín (kind of flower), mushroom tamales and the famous Yecapixtla cecina (cured meat), among others.

The famous esquites are a must-try in Cuautla made with corn grains, serrano chili and epazote.

Huauzontle is a very common plant throughout the state of Morelos, it looks a bit like amaranth and is also very nutritious. Here it is served capeado (frying an item that has been previously covered with an egg layer) and can be filled with cheese and covered with a tomato sauce.

As for the desserts, due to the good climate in Cuautla and its surroundings, you always can enjoy a sorbet made from delicious fresh local fruits such as cherimoya and zapote.

Esquites Recipe

Ingredients:

  • 20 shelled white corn
  • ½ chopped onion
  • 2 cuaresmeno chiles, chopped
  • 1 branch of fresh epazote
  • water
  • butter or oil
  • salt to taste

Directions:

Put the oil or butter in a large saucepan, season the onion with the cuaresmeño chile.

Once the onion and chili are ready, add the corn grains and fry for about 5 minutes.

The grains are covered with enough water. Add the chicken broth and season with enough salt.

Cooked for approximately 45 minutes and when the grains are almost ready, add the epazote branch and correct the seasoning.

Served either dry or with a little broth.

Add lemon, salt, piquín pepper, mayonnaise and grated cheese.
