WHAT TO EAT IN DOLORES HIDALGO

One of the most iconic dish is the enchiladas mineras (enchiladas are traditionally filled with onions, cheese, and a stew-like combination of carrots and potatoes).

You can also try the cheese tamales, tortas de carnitas and if you want to try something more exotic, there is chili with red ant.

Another of Dolores Hidalgo's specialties is the stuffed chile de chorro. It is a green chile, very similar to the poblano chile, which owes its name to the way it is watered. The chile can be stuffed with beef picadillo or a rich paste that is made in the region with beans, tomato, onion and cheese.

However, this Magical Town is famed for their nieves or ice creams, all homemade. There is a wide variety of flavors that range from the typical lemon and chocolate, to more sophisticated flavors such as piña colada, cheese, corn, beer, shrimp, tequila, nopal, pulque, mole, rose petal and maguey, to name a few. These delicious ice creams can be savored in the Main Square, where you can find more than 20 stalls with this incredible range of flavors.

Continuing with the ancestral traditions, you can taste some gorditas de nata (looks very similar to an English muffin with a slightly sweet taste and a subtle milk aroma) and anise or a piloncillo bread, with a chickpea and cocoa leaves atole.

Here, as in other communities in Guanajuato, sealed tortillas are made with a special dye that is placed on the stamps carved in wood. The carving of the utensils is done by men, although their use is exclusive to women, a tradition that has been preserved over time among families with Otomi roots. In addition, each family has a different design which gives them their own identity.

In recent years several vineyards have been established in the region and it has been consolidating as a wine producing town. For this reason, we suggest that in addition to taking a tour of the vineyards, you accompany your meals with a good local wine.

“Gordita de Nata” Recipe

Ingredients:

  • ¼ cup of nata (comes from raw milk or fresh milk. It’s the film that forms at the top when the raw milk is cooked)
  • 3 tablespoons of vegetable shortening
  • 3 tablespoons of lard
  • 1 bar of butter
  • ½ cup of sugar
  • 2 eggs
  • 1 ¾ cups of flour
  • 4 teaspoons of salt

Directions:

In a bowl, combine flour, baking powder, and salt, add the sugar little by little.

Add eggs one by one.

Knead until perfectly incorporated.

Add the remaining flour little by little, beating all the time to obtain a soft and malleable dough.

On a floured surface, spread dough. Using a round cutter, cut gorditas.

Place them on a hot griddle and cook over low heat until the surface is golden brown on both sides.

Remove them and let them cool.
