WHAT TO EAT IN ZIRAHUÉN

This is one of Michoacán's best kept secrets, located on the shore of a beautiful lake that is why many of its dishes include charales, mojarras, trout, carp and white fish.

You can taste dried charales with lemon, salt and chili, or crispy fried. Other options are the filete de pescado blanco rebozado (battered white fish fillet) or white fish broth. Also trout or carp with garlic and wrapped, are some of the dishes that you can savor in Zirahúen.

Other options are shrimp broth, squash flower and huitlacoche quesadillas, and stuffed chiles, which you can accompany with some delicious, freshly made blue tortillas and green or red sauces.

Of course, being in Michoacán you can enjoy other typical dishes of the state such as tarascan soup and the traditional uchepos and corundas.

Carpas Asadas (Grilled Carp) Recipe

Ingredients:

  • 8 white fish, clean, boneless and open in half
  • 1 lemon
  • ½ cup of flour
  • 6 eggs
  • corn oil
  • orejona lettuce leaves
  • sliced onion
  • 1 tomato in slices
  • 1 lemon sliced
  • salt to taste
  • pepper to taste

Directions:

Thoroughly wash the fish and bathe it with lemon juice.

Separate egg whites from egg yolks, and use a clean, dry stand mixer to whip the egg whites to stiff peaks and the beat the yolks until a ribbon forms

Combine the whites and the yolks and add a tablespoon of flour.

Dip the fish in flour and shake off the excess. Pass it through the egg and flour mixture. Fry until golden brown and drain on absorbent paper.

Garnish with lettuce leaves and slices of onion, tomato and lemon.
