WHAT TO EAT IN HUEJOTZINGO

Huejotzingo is known for its carnitas. In fact, Hernán Cortés established the first pig farm in Mexico in 1526. A great place to try them is the Hermanos Serdán Market.

The town also produces poblano chile, corn, and tejocote, which are used in many local dishes. 

Typical dishes include mole poblano, green pipián, cemitas poblanas, tamales, and the iconic chile en nogada.

Among the sweets, you can find ates, jamoncillo, alegrías, pumpkin sweets, tortitas de Santa Clara, and camotes, among others.

Pumpkin Sweet Recipe

Ingredients:

  • 2 ½ cups of water
  • 4 pieces of piloncillo in chunks
  • 2 pieces of cinnamon sticks
  • 6 cloves
  • 1 star anise
  • 2 oranges cut into quarters
  • 1 kilogram of castilla pumpkin cut into pieces

Directions:

Heat the water with the piloncillo, cinnamon, cloves, anise, and orange until boiling.

Add the pumpkin and cook over high heat for 20 minutes.

Finish cooking over low heat for 10 more minutes or until the pumpkin is cooked and the syrup has slightly thickened.
