WHAT TO EAT IN TORREÓN

Due to the different settlements of foreign ethnic groups in the area, the gastronomy is very varied.

There are influences of Spanish, Lebanese, Arab, Argentine, Brazilian, French, Japanese, Chinese, and Mexican cuisine.

One of the typical appetizers of this city are corn or flour gorditas, or burritos, both are filled with various stews such as tinga, potatoes with chorizo, chicharrón, rajas or beans with cheese, among many others.

Among the most common dishes are: tortas filled with pork carnitas and avocado, the “discada”, a mixture of grilled meats (often sausage, chorizo, ham, bacon and flank steak but can include a different variety of meats) as well as onion, pepper, jalapeño and sometimes cheese. Discada ideal for meat lovers. Another important dish is fritada and cabrito, fried lamb tripe with spices, accompanied with flour tortillas.

Of course a must-try are the very good quality beef cuts.

Discada (mixture of grilled meats) Recipe

Ingredients for 10 servings:

  • 1 kg of minced beef
  • 1 kg of minced pork
  • ¼ chopped bacon
  • ¼ chopped ham
  • ¼ turkey sausage
  • 2 pieces of chorizo
  • 1 chopped onion
  • fresh jalapeno pepper to taste
  • 6 diced tomatoes
  • 1 bunch of coriander
  • 2 tablespoons of Maggi seasoning
  • 2 tablespoons Worcestershire sauce
  • salt to taste
  • Pimienta al gust

Directions:

Cook bacon in a large skillet over medium-high, stirring occasionally, until just starting to crisp, about 6 minutes. Add chorizo and turkey sausage, cook, stirring to break into pieces, until chorizo is browned and bacon is crisp, 4 to 6 minutes. Using a slotted spoon, transfer bacon and chorizo to a large bowl, reserving drippings in skillet.

Add pork, steak, and remaining 2 tablespoons oil. Cook, stirring occasionally, until browned, 5 to 6 minutes.

Everything is seasoned with Maggi seasoning and Worcestershire sauce.

Add the coriander and tomato later and let it cook very well.

Reduce temperature to medium-low; cook, stirring occasionally, until liquid has mostly evaporated, about 10 minutes. At the end you can add a grilled cheese.

Serve in flour tortillas with desired toppings and some sauce.
