WHAT TO EAT IN AQUISMÓN

In this wonderful Magical Town, corn plays a very important role in its gastronomy.

Here you can savor some delicious Huasteca enchiladas, bocoles, which are gorditas made of corn, bean tamales, or a spectacular zacahuil, a huge tamale that can feed up to 70 people and is served at large celebrations.

You can also savor some empanadas stuffed with cheese and a wide variety of dishes made with tuna and nopal.

As for drinks, you should try the jobo, plum or capulín wine. Another drink you should try is the rich high altitude coffee.

Gastronomy and typical cuisine in Aquismón

“Bocoles de Frijoles y Rajas” (corn dough patties with beans and roasted poblano strips) Recipe

Ingredients:

  • 1 cup of refried beans
  • 4 roasted poblano peppers
  • ¼ cup sliced onion
  • ½ cup of cream
  • 1 kg of corn dough
  • 2 tablespoons of lard
  • 1 pinch of baking powder
  • ½ cup of grated fresh cheese
  • 1 tablespoon of oil
  • ¼ cup of warm water
  • salt to taste

Directions:

Peel the chiles and remove the veins and seeds. Cut the chiles in slices.

Season the onion in the oil and add the poblano slices. Add the cream and season with salt. Cook over low heat for two minutes.

Mix the dough with the lard, baking powder and water until it is smooth.

Form medium balls and flatten with a tortilla press calculating that the thickness is about ½ centimeter.

Cook on a griddle or skillet over medium heat on both sides.

Open in half and fill with the refried beans, rajas and cheese.
