“Pollo a la Manzana” (chicken and apple) Recipe
Ingredients for the marinade:
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- salt to taste
- 1 tablespoon of paprika
- 1 tablespoon rosemary
- 1 tsp dried oregano
- ½ cups of orange juice without seeds
- 1 tablespoon of olive oil
Ingredients:
- 700 grams of boneless chicken breast
- 3 Gala - Washington apples
- 1 tablespoon of olive oil
- ¼ cups finely chopped onion
- 1 tablespoon of garlic finely chopped
- 1 tablespoon of finely chopped ginger
- ¼ cups celery, slanted and in small pieces
- ½ cup of carrot cut into small pieces
- ½ cup of broccoli in small trees
- ¼ cup raisins
- 2 tablespoons of soy sauce
- 1 tablespoon of Maggi seasoning
- 1 cup of chicken broth
- 2 tablespoons of brown sugar
- 1 teaspoon of previously hydrated corn starch
- fresh rosemary
Directions:
Put the chicken breasts in a bowl and season them with the onion powder, garlic powder, salt, pepper, paprika, rosemary and oregano. Add orange juice and olive oil. Mix and leave to marinate for 30 minutes in the refrigerator.
Melt the butter in a frying pan and place the chicken. Cook for two minutes on each side. Add a little of the marinade juice. Cover and cook the chicken for 25 minutes at medium heat.
Cut the apples into half moons, remember to remove the core.
For the sauce, put olive oil in a pan and add the onion, garlic, ginger, celery, carrot and broccoli with soy sauce, Maggi seasoning and chicken broth and cook for 5 minutes. Add the brown sugar, cornstarch and apples. Cook for an additional 6 minutes or until vegetables are tender and sauce has thickened. Place the chicken breast pieces and cook for another 5 minutes.
Serve the chicken and bathe with the sauce and vegetables.
Decorate with rosemary.
