WHAT TO EAT IN COMALA

The "Comala Botanas", such as the “Tatemado”, have become a tourist attraction.

You can enjoy the “Tatemado” in any restaurant along the town, as well as the sopitos that are small toast covered with picadillo (ground meat, tomatoes and other ingredients) and bathed in juice. And other important dish are the sopes gordos de pata, pollo o lomo.

You can also delight with pork pozole and tatemado, a stew that includes macerated pork in coconut vinegar and chile colorado.

Local tamales are also must-try dishes like the tamal pata de mula, filled with beans and the tender corn tamal.

In the rainy season you can also try dishes that include river prawns and chacales (freshwater prawns) .

Another delights of this magical town is Comala's Pan or Picón that is a rich sweet bread that leaves a pleasant flavor to burned sugar and is the ideal companion of the delicious local coffee.

Here you can enjoy a punch of Comala with several flavors to choose from, the most traditional is Granada punch, but there is also plum, peanut, guava and tamarindo. Another drink is the Tuxca, a regional mezcal.

You can also savor the bate that is a cold atole of chan seeds with piloncillo honey, and the tejuino, a corn atole.

The comalteco coffee has gained worldwide fame for its extraordinary flavor. When you visit this magical town, do not forget to carry a package of this aromatic coffee, as well as some fresh cheeses, alfajores (sandwich cookies) and sea salt.

Gastronomy and typical cuisine in Comala

“Picón de Comala” Recipe

Mass ingredients:

  • 1 kg of flour
  • 45 grams of yeast
  • 3 eggs
  • 150 milliliters of milk
  • 200 grams of margarine
  • 50 grams of vegetal butter
  • 10 grams of salt
  • 200 grams of sugar
  • 1 vanilla spoon

Ingredients for the cover:

  • 400 grams of vegetable butter
  • 400 grams of icing sugar
  • 500 grams of flour
  • 150 grams of dough for picon
  • 1 gram of cinnamon powder

Directions:

To prepare the dough, the dry ingredients are placed in a the mixer: flour, yeast, salt, and sugar. Then, margarine, egg, vanilla, vegetable butter, lemon juice and milk gradually are added.

Continue beating until you get a homogeneous mixture.

To make the cover put in a mixer all the ingredients and incorporate them until there is a homogeneous paste.

Make balls with the dough and put them on the previously floured work table and put on a portion of the cover along the cylinder-shaped picon.

Bake in greased trays at 180ºC approximately for 15 minutes.
