WHAT TO EAT IN ZEMPOALA

Zempoala offers a rich and varied gastronomy, which is why it has received the distinction of Pueblo con Sabor (Town with Flavor).

Its traditional dish is the delicious Ximbote, made in a maguey stalk stuffed with pork, chicken, chinicuiles, escamoles or snails, which will leave a unique flavor on the palate.

You can also try mushrooms, worms, barbacoa (meats slow-roasted over an open fire), pollo en pulque (chicken in pulque), ceviche de hongo seta (mushroom ceviche), ximbote de caracol y escamol (a maguey stalk with a cross section where the snails and escamoles are placed), gualumbos en tortitas de huevo (quiotitos flowers with eggs), nopalachile (heart of nopal) and caldo de malva (malva, an edible plant, broth), among other dishes.

La Guadalupana, is considered an unmissable tourist attraction in Zempoala. It is a bakery that is more than 70 years old producing mouthwatering sweet breads like cocol or pan de burra (piloncillo stuffed with cheese prepared in the oven with pirul firewood).

There is wide variety of drinks to taste in Zempala, like fresh waters, a good coffee, pulque or a craft beer.

Gastronomy and typical cuisine in Zempoala

“Ceviche de Setas” Recipe

  • ½ kg of mushrooms
  • ½ cup chopped red onion
  • ½ cup of orange juice
  • 1 lemon
  • 12 olives
  • ½ red pepper
  • 1 cucumber
  • 2 jalapeño peppers
  • ½ jicama
  • ¼ cup chopped cilantro
  • 1 avocado
  • olive oil to taste
  • salt to taste
  • pepper to taste
  • tortilla chips

Directions:

Sauté the mushrooms in a pan with oil and add salt. Cool, cut into strips and reserve.

Dice the cucumber, the chiles, the onion, the jicama, the pepper and the olives, cut them in half. Mix all these ingredients with the mushrooms.

Add orange and lemon juice. Season with salt and pepper and put in the refrigerator for 20 minutes.

Add the coriander leaves.

Serve the cold mushroom cocktail in a deep bowl and top slices of avocado in each serving.

Accompany with corn chips.
