WHAT TO EAT IN AJIJIC

Here you can find fresh fish, frog legs and carp caviar.

This picturesque town is located on the shores of the Chapala Lagoon, so its gastronomy is lacustrine.

You can also taste typical dishes such as tacos, sopes, enchiladas, pozole, tamales that you can accompany with delicious fresh waters. Also, you cannot forget the delicious dishes from Jalisco such as birria, barbecue and pozole from Guadalajara.

Tapatio Pozole Recipe

Ingredients:

  • 2 chicken legs
  • 2 chicken thighs
  • ¾ onion
  • 3 cloves of garlic, peeled and sliced
  • 250 grams of pork loin cut into medium squares
  • 2 pig's feet
  • 4 cups of precooked pozole corn
  • 3 dried ancho chiles
  • 1 cup julienned lettuce
  • 5 radishes cut into squares
  • ¼ onion finely chopped
  • ¼ cup dried oregano
  • 6 lemons cut into quarters
  • salt to taste
  • corn toast

Directions:

Cook the chicken in a pot with water, salt, onion and garlic for 20 minutes.

In a pressure cooker, put a quarter of an onion, a garlic, a teaspoon of salt and add the pork legs, the cut loin and the pozole corn, with enough water. Cover and let cook for 35 minutes or until the meat is well cooked. Add the cooked chicken and let cook over medium heat.

In another pot, put the ancho chili peppers to soak in hot water and once they are soft, remove the water and blend with the onion, garlic, a little water and salt.

Once this mixture is strained, add it to the meat and chicken pot and let it cook for an additional 10 minutes.

Accompany the pozole with the lettuce, radishes, chopped onion, dried oregano, lemons and toast.
