WHAT TO EAT IN GUADALAJARA
This cosmopolitan city has preserved its traditions and the typical dishes are the perfect combination between past and present.
Guadalajara is Mexico’s second largest city and the capital of Jalisco state, is home to mariachi music, the “churros” and iconic tequila. The local cuisine in this city is so outstanding, that you can’t count calories when you visit.
It is pretty much impossible to name all the wonderful dishes from this region, but amongst the famous dishes you'll find the birria, it is an explosion of tastes, a fusion of Spanish lamb or goat with the flavors of Mexican tomatoes and spices, which can be served in tacos or in a stew with onion, and lemon. One of the best places to try the birria tacos are the local flea markets.
There is the ever popular, "torta ahogada" (drowned sandwich), the essence of this typical dish is the “birote”, a salty and crispy kind of baguette, it can be filled with pork or scrambled eggs, as well as tomato, beans and jalapenos and then it is “drown” in a spicy red sauce. You can try the “torta ahogada” with a street vendor, a fútbol bar, or in a fancy restaurant. Another unforgettable dish is the “pozole rojo”, a broth, stew, or soup with pork, lettuce, salt, lime, avocado, cheese, oregano and radish. The one made in Jalisco is dark red, because the salsa is based with guajillo chili and tomato. This is a common dish in the traditional “cenadurías” all over the city. There is another soup dish “Carne en su jugo” a broth made with small pieces of juicy beef steak, garnished with bacon, chopped onions, coriander, salt, lime and corn tortillas.
If you crave a sweet treat after every meal a very good option is “jericalla”, a nun created dish using milk, eggs, sugar and cinnamon and is a cross between flan and creme brulee; or the “capirotada”, is a bread pudding made with cinnamon, piloncillo, cloves, raisins, bread, and cheese.
In Guadalajara you will find popular markets full of flavors, aromas and colors, these are the best options to try the traditional appetizers. On the other hand, there are hundreds of restaurants around the city where you can savor the typical Mexican cuisine, as well as the most elaborate dishes of international cuisine.
All the delicious dishes of the region can be accompanied by delicious refreshing drinks such as Tejuino (fermented corn) and fruit punch, especially in flavors such as pomegranate, guava and quince. Of course, the best way to enjoy these gastronomic delights is with a tequila with salt, lemon and “sangrita”: a preparation of tomato juice.
Gastronomy and typical cuisine in Guadalajara
“Tortas Ahogadas” Recipe
Ingredients for 8 servings:
- 8 bolillos rolls
- 600 gr of crispy pork “carnitas” shopped
- 7 tomatoes
- 1 onion
- ½ red onion
- 3 cloves of garlic, peeled and sliced
- 1 tsp dried oregano
- 100 gr chiles de arbol, stems removed
- ½ cup of white vinegar
- salt to taste
Directions:
Boil the tomatoes to remove the skin. In a pot, combine the tomatoes, ancho chiles and chiles de árbol. Add the water and bring to a boil. Reduce heat and cook for 20 minutes.
Blend this mixture with chopped onion, sliced garlic, salt, oregano, pepper, vinegar and chicken broth. Blend until smooth and set aside.
Slice the avocado and radishes. Slice the rolls in half and remove some of the excess bread inside and fill with the crispy pork “carnitas”, the avocado and the radishes.
Cover the “torta” with the sauce.
Garnish with the sliced red onion mixed with vinegar and oregano.
