WHAT TO EAT IN METEPEC

Some of the dishes to can savor in Metepec are the typical barbacoa de borrego al horno (baked lamb barbecue).

Other typical dishes are: mixote de conejo (pit-barbecued rabbit meat dish) and sopa de hongos (mushroom soup).

You can also enjoy the tacos de plaza, the tamales de charal and the cumpascle, a delicious stew with corn kernels, charales, squash blossoms and chili.

Mushroom Soup Recipe

Ingredients:

  • 2 cups of filleted mushrooms
  • 2 cups of shredded mushrooms
  • ¼ sliced onion
  • 2 garlic cloves finely chopped
  • 2 guajillo chiles in strips
  • 1 liter of chicken broth
  • 1 branch of epazote
  • 1 tablespoon of oil
  • 1 lemon in halves
  • 1 guajillo chile
  • salt to taste
  • pepper to taste

Directions:

Het the oil in a large saucepan and cook the onions and garlic until soft but not browned, about 8-10 minutes.

Add the guajillo chile and season with salt and pepper.

Pour in the chicken broth, cover and cook until it comes to a boil.

Add a branch of epazote.

Cook for 15 minutes over medium heat and with the pot covered.

Serve hot and accompany it with strips of tortillas, lemon and chile strips.
