Gastronomy and typical cuisine in Pabellón de Hidalgo

Receta de Enchiladas Placeras

Ingredients:

  • 4 tomatoes
  • ½  ½ white onion
  • 1 garlic clove
  • 4 deseeded morita chiles
  • 2 tomato bouillon cubes with chicken flavor
  • 12 tortillas
  • ½  ½ cooked and shredded chicken breast
  • 3 oil tablespoons
  • 1 cup fresh cheese

Directions:

Sauce:

Roast the tomatoes, onion, and garlic on a griddle. When they are well roasted and cooked, remove from the stove, peel the tomatoes, and add the vegetables to a blender.

Heat one tablespoon of oil and fry the chiles. Add them to the blender along with the rest of the vegetables and blend until smooth. Strain the sauce through a fine mesh strainer and set aside.

Heat one tablespoon of oil in a pot or saucepan. Fry the sauce for 15 minutes, season with the tomato bouillon cubes, and remove from heat.

Assembling the Enchiladas:

Heat two tablespoons of oil in a pan. Dip the tortillas, one by one, to soften them. Add the chicken and roll them up.

Serve the enchiladas on a plate, drizzle the tortillas with the hot sauce, and sprinkle with fresh cheese.
