WHAT TO EAT IN BACALAR

The gastronomy in this Magical Town is a combination of Belizean, Caribbean and Yucatecan food.

Among the dishes that you should not miss is the classic rice with beans, which here has the peculiarity that it is cooked with coconut oil. It is a very Caribbean recipe.

Other typical dishes of the region are bean tamales and the traditional arm of the queen, a dish that is included in all parties and consists of a large tamale with boiled egg and chaya. Additionally, you can try the puchero and the chocolomo.

There are also dishes that include shellfish and fish such as pan de cazón (a casserole dish that is prepared in the style of lasagna using layered tortillas with shark meat), red snapper in various presentations, lobster and the regional dish that is tikin-xik fish, a fish marinated with achiote and sour orange.

Rice with Beans Recipe

Ingredients:

  • ½ kg of red beans
  • 1 onion
  • 1 kg of rice
  • 2 cloves of garlic
  • ½ bell pepper
  • ½ liter of oil
  • 1 pinch of ground pepper
  • 1 sprig of coriander
  • ¼ teaspoon oregano
  • milk from a coconut
  • 2 ripe plantains

Directions:

Cook the beans with half an onion.

Fry the rice and sets aside.

Chop the garlic, half the onion, cilantro and bell pepper. Fry in oil and add pepper and oregano.

The pulp of a coconut is cleaned, removing the dark part and passed through an extractor to obtain the milk, or you can grind it in a blender with a cup of bean broth and strain.

Once the beans are cooked, with the boiling broth add the rice and coconut milk.

When it boils again, lower the heat and let it cook until the rice is cooked.

The ripe plantain is cut into slices and fried in oil. Then put the plantain on absorbent paper to remove excess fat.

Rice with beans is served and plantains are placed on top.
