WHAT TO EAT IN TIJUANA
It was in one of the restaurants in Tijuana where the international Cesar's Salad was created.
Tijuana is distinguished by its cuisine, it is a combination of the ancient Mexico along with Mediterranean ingredients. This has resulted in a very interesting fusion for lovers of culinary art. This important outstanding gastronomic center have received influence of French, Spanish, Italian and American cuisine.
The culinary tradition of Baja California goes hand in hand with its history and its development. The cuisine of the state has its main base in the culinary habits of the peninsular people, who found in the sea their main ally. This explains why many dishes are based on the fish and seafood offered by the cold and warm waters of the region.
It can be said that the culinary art of the region is constantly evolving, and that experimentation is part of an interesting process capable of surprising anyone.

Caesar Salad Recipe
Ingredients for 4 servings:
- 20 romaine lettuce leaves
- 2 tablespoons olive oil
- 2 teaspoon English sauce
- 1 teaspoon Djon mustard
- 15 gms. garlic, crushed
- 1 large egg yolk
- 3 tablespoons fresh lemon juice
- 3 gms. freshly ground black pepper
- 35 gms. Parmesan cheese
- 4 pzas. crisp croutons
- 8 anchovy fillets packed in oil, drained
- salt to taste
Directions:
Chop together anchovy fillets, garlic, English sauce, and pinch of salt.
Use the side of a knife blade to mash into a paste, then scrape into a medium bowl.
Whisk in egg yolks, 2 Tbsp. lemon juice, and mustard. Adding drop by drop to start, gradually whisk in olive oil, until dressing is thick and glossy.
Season with salt, pepper, and more lemon juice, if desired. In a large mixing bowl, combine all of your ingredients and toss gently to coat the lettuce in Caesar dressing. Whisk in Parmesan.
