WHAT TO EAT IN XALAPA
Xalapa has an important gastronomic heritage, both from the pre-Hispanic and Spanish culture.
One of the most representative dishes of Xalapa are the "xalapeño chiles" stuffed with mutton or seafood mince, served with garnished carrots and pickled onions. However, it has a wide variety of typical dishes like: "huevos tirados", cooked with beans and served with cheese, tortilla chips, fried plantains and rice; “chileatole”, spicy broth seasoned with spices with corn, carrots, potatoes and green beans; the mushroom broth with oak, epazote and garlic; tamale with “izote” flower flavored with chili; the red “pipían” with epazote, chile ancho and dried chili; the green mole with pork or chicken, epazote and various vegetables; and a wide variety of fish and seafood dishes, like the Veracruz-style fish, absolutely delicious and not too spicy.
The local cuisine also includes a wide variety of Mexican “antojitos”, such as: tamales, “picadas” (small tortillas with a pinched-up rim around the edges to hold the filling), “molotes” (made with a mixture of nixtamalized corn masa and mashed potatoes and filled with meat) among others, all of them are prepared with the local flavor.
Xalapa offers delicious desserts most of them are related with the great variety of fruits of the region, prepared with sugar or with panela (piloncillo). You can try pumpkin, biznaga, chilacayote, plum, peach, etc., and the treat are know as " frutas cubiertas" (covered fruits). Also using the fruits are the jamoncillos with delicious fillings. Other common desserts are corn bread and “buñuelos” (thin, fried pastries with honey).
One of the most typical drink in Xalapa are the “Toritos”, a fruit flavor liquor elaborated with evaporated milk and cane liqueur. There are several options, guava, mango, peanut, coconut, strawberry and, of course, coffee.

Stuffed Xalapeños Chiles Recipe
Ingredients for 4 servings:
- 2 eggs
- 1 cup of flour
- Fillings to choose: Ground beef sweet or salted, tuna salad or stew, cream cheese, shredded cheese, chicken salad or stew, pork rind, bacon, ham, or cooked vegetables
- Oaxaca cheese
- oil
- 8 large jalapeño peppers
- vinager
Directions:
Wash the Jalapeño Peppers, then with a sharp knife carefully slice the chiles lengthwise. Remove the veins and seeds.
Cooked the chles in boiling water for 5 minutes or until they change color from light to dark green.
If you don’t like too spice you can soak the chiles in water and vinegar for about 1 hour.
Separate out the egg yolk and whip the egg whites on medium speed and beat the egg whites until soft peaks form. Then add the yolk and two tablespoons of flour. Reserved.
Drained the chiles and filled with the mixture of your choice (seasoned ground meat like picadillo, tuna salad or the cheese of your choice). In a shallow dish, add flour. In a second shallow dish, add eggs and beat lightly. First dusted in flour, shaking off any excess. The egg is the next step. Then put the chiles in the crumbs for a crispy coating.
Cut cheese into long thick pieces and fill each chile.
Carefully place them one by one into the hot oil. Let the chile fry until golden brown.Place on a paper towel or bag to drain away excess oil.
Served with rice.
