WHAT TO EAT IN VIESCA
As in many other places in our country, corn has a preponderant place in local gastronomy.
Here you can savor the traditional wheat or corn gorditas from de cocedor (cocedor is the clay oven where they are made), stuffed with delicious stews such as picadillo, beans or pressed pork rinds, or a delicious cabrito al pastor (tender goat meat with extra crispy skin).
You can also savor a deer tamale, which is served on some of the most important dates and religious ceremonies in town.
This town has become famous for its burnt milk sweets and products made with dried dates, as well as for its sweet rolls that are known as "mamones", a whole wheat sweet bread made in wood-fired ovens.
Another delicacy that you cannot miss on your visit to Viesca is the nieves de garrafa (ice cream), with a wide variety of flavors, but the most famous are the walnut and strawberry.

Mamon Biscuit Recipe
Ingredients:
- 35 grams of wheat flour
- 30 grams of corn starch
- 3 large eggs
- 40 grams of sugar
Directions:
Preheat the oven to 190ºC.
Beat the whites into stiff peaks and separately beat the yolks until they change color.
Sift the flour, starch and sugar in a strainer and put in a container.
Integrate the whites mounted to the yolks in a soft and enveloping way and add the dry ingredients.
Pour the preparation into a previously greased and floured mold.
Bake at 170ºC for approximately 20 minutes or until it is done.
Let cool and serve.
