WHAT TO EAT IN COLIMA

The "Comala Botanas", such as the “Tatemado”, have become a tourist attraction.

The traditional cuisine of Colima offers a magnificent variety of splendidly flavored dishes and it has a marked Spanish influence. The gastronomy of the state combine all the ingredients to please the most demanding taste.

Typical dishes include tatemado (pork is marinated in coconut vinegar, spices and herbs), chilayo (pork and vegetable stew), white pozole with pork, beans, pipian, menudo (soup cobbled together with beef tripe, hominy, garlic, onions, lime and dried chilies) and cuachala (prepared based on pork, beef and chicken).

With respect to the delicious “antojitos” (appetizers), in Colima you can taste: sopitos picados (small fried tortillas with shredded meat and local cheese), beans with diapers, white pozole, toasts, sweet enchiladas and the exquisite corn tamales, ash or picadillo accompanied with pot coffee or white atole.

Along the cost of Colima in places like "La Culebra" black sand beach with a series of typical restaurants called “enramadas”, Manzanillo, Cuyutlán, El Paraíso, Pascuales, El Real, Tecuanillo and Boca de Apiza, the coastal fishing provides fresh seafood including swordfish and red snapper.

Some of the favorites in Colima are the "Sopa de Mariscos" (seafood soup) with fish, shrimp, crabs and octopus with its indisputable seafood flavor; and the “ceviche colimense”, dorado (mahi mahi) or red snapper but it can be made with any local fish, marinated in lime juice and then drained producing a dry-style ceviche; and the "pescado zarandeado", seasoned, grilled fish, among others.

The city of Colima is famous throughout the country for its excellent desserts such as cocadas, soft fruit candies made from coconut, pineapple or banana; alfajores, biscuits sandwiched together with a sweet filling that usually involves coconut, jericallas, flan like dessert compared to creme brulee; and tamarind pulp.

An ideal place to enojoy the gastronomy of Colima is the Álvaro Obregón Market, an ideal place to walk through its aisles and observe all the fresh products and taste the typical snacks.

There are also typical drinks like: the “tuba”, made from coconut palm sap and is sweet and pleasan drink served with toasted peanuts in the top; the “bate” drink made of the toasted, ground-up herb called chan that is sweetened with honey; the “tejuino”, cold beverage made from fermented corn; and the delicious "ponche" made with a mixture of tropical fruits.

Gastronomy and typical cuisine in Colima

“Sopitos” style Colima Recipe

Ingredients for 5 servings:

  • 20 “Sopitos”, small fried tortillas
  • ½ kg of ground beef
  • 1 onion
  • 4 tomatoes
  • oregano
  • parsley
  • grated cheese
  • lettuce
  • chicken seasoning
  • salt to taste
  • oil

Directions:

Cooked the meat for 30 minutes in a pot with a piece of onion and a spoonful of the seasoning and salt.

Once cooked, drain and fry.

Place the tomatoes in a pot of boiling water, remove the tomatoes and gently peel sink from flesh. Then blender the tomatos with the onion, a pinch of oregano and salt, reserve this sauce.

The lettuce is washed and disinfected and finely chopped.

Fry the sopitos and and place on absorbent paper.

For the presentation, place two or three “sopitos” in a plate and add meat, lettuce, parsley, cheese and sauce.
