WHAT TO EAT IN EL FUERTE

Its gastronomy is very rich and varied.

Among its typical dishes are: colache (a pumpkin stew and spicy), chilorio (shredded pork simmered in a delicious chili sauce with spices), el cocido (beef broth), machaca (dried meat), meat tamales, caldo de carne (meat broth), gallina pinta (slow-simmered soup with with fork-tender beef, beans and hominy) and barbacoa (sheep, goat, or beef meat steam cooked in an underground oven), among others.

There are also several bass-based dishes such as: bass rinds, bass meatballs, zarandeado fillet and mariscadas (a seafood stew).

However, the most representative dish of El Fuerte is the guacabaqui, which is of Yaqui origin, and is prepared with chickpeas, various vegetables, and beef and pork.

You can also try a wide variety of tamales filled with meat or pineapple.

About the sweets, you can delight yourself with a delicious rice pudding, jamoncillos (a soft and rich milk fudge), capirotada (bread pudding), coyotas (empanada-like cookies), cheese gorditas and semitas, among others.

You can refresh yourself with horchata or barley water, or enjoy a pinole atole.

Gastronomy and typical cuisine in El Fuerte

Guacabaqui Recipe

Ingredients:

  • 1 beef tail
  • ½ kg of spine
  • ½ kg of solid pork
  • ½ kg of beef brisket
  • ½ small onion
  • 1 small cabbage
  • 5 corn
  • 5 carrots
  • 1garlic
  • 2 cambray onions
  • 3 green chiles
  • 3 tomatoes
  • 350 grams of green beans
  • 6 small potatoes
  • 1 large piece of pumpkin from Castilla
  • 2 cups of chickpeas
  • salt to taste

Directions:

Soak the chickpeas one night before.

The next day, cook the meat with a piece of onion and a little salt. When the meats are cooked, add the drained chickpeas and the chopped corn.

Roast the pumpkin with a little olive oil for about 10 minutes and add it to the previous mixture and cook for five minutes.

Add the garlic, spring onions, sliced up to the stem, tomatoes and chilies. Let it cook for 15 minutes and add the rest of the vegetables, until is cook.

Serve with chopped onion and coriander.
