WHAT TO EAT IN COCULA

The cuisine of this region is a true mix of Nahuatl and Spanish culture. 

According to the proud inhabitants of Cocula, you can find  the best birria in Jalisco here. This dish is made with goat, beef, or pork, accompanied by an adobo with tomato, chili, and spices. They offer goat, beef, and pork birria.

You can also enjoy other typical dishes like pozole and tacos, always accompanied by good tequila.

The best part is that, in most places, you can enjoy the sound of a mariachi band in the background.

Recipe for Dulce de Leche (candy made from milk)

Ingredients:

  • 2 cups of cow's milk
  • 2 cups of sugar
  • 1 vanilla bean
  • 1 pinch of baking soda
  • walnuts to taste

Directions:

Boil the milk with the sugar.

Split the vanilla bean in half, scrape, and add the seeds and pulp to the milk.

Add the baking soda and stir until it becomes a smooth paste.

Remove from heat.

Knead the mixture until it has a manageable texture.

Form medium balls and flatten them with a spoon. They should resemble pyramids with a flat top where a walnut is placed.

You can also form cylinders and place a walnut on top.

Let them cool until they harden.
