WHAT TO EAT IN SANTA CLARA DEL COBRE
In the gastronomy of this Magical Town you can clearly see its Purépecha roots.
Among the dishes that you cannot miss are: borrego horneado relleno con verduras (baked lamb stuffed with vegetables), pollo a la artesa (chiken with vegetables in a red sauce), barbacoa de borrego (lamb meat, combined with delicious herbs and spices) and the carnitas cooked in a copper saucepan.
One of the most representative dishes is tortas de tostada de carne apache made with a toasted tortilla soaked in red sauce that becomes the filling of the bolillo along with some stew.
You can also savor some typical dishes of Michoacan cuisine such as corundas (small tamales characterized by their triangular shape), sopa tarasca (soup made with a base of pureed beans along with tomatoes and dried chiles), and enchiladas placeras (fried tortillas with guajillo sauce, then filled with cheese).

“Tortas de Tostada” Recipe
Ingredients:
- 2 kg of beef neck in pieces
- 1 kg of lemons
- 3 kg of tomato washed and chopped
- 1 kg of chopped onion
- ½ kg of chile perón or manzano, clean and chopped
- 1 can of chili in rajas
- 3 cups of refried beans
- 1 small cabbage thinly sliced

Ingredients for the tortillas:
- 3 kg of corn dough
- 3 liters of oil
Ingredients for the sauce:
- 200 grams of guajillo ancho chile soaked in water
- 3 cloves of garlic, peeled and sliced
- salt to taste
Directions:
Place the meat in a container and bathe it with lemon juice. Let it rest until the meat turns white. Then add the tomato, onion, chile, rajas and salt to taste.
To make the sauce, grind the chilies with the garlic cloves and salt. Season for five minutes and reserve.
Prepare the tortillas with the dough, fry them in the oil until they are toasted and golden. Drain on paper to absorb excess oil. Spread them with refried beans and place the meat stew on top. Add the cabbage and the guajillo sauce to taste.
Put the toast in a telera cut in half.
It can be served with cabbage and additional sauce.
