WHAT TO EAT IN URUAPAN

Uruapan is a must-visit destination for foodies around the world.

One of the reasons Uruapan is such a great foodie city is the abundance of fresh, locally sourced ingredients. The region is known for its fertile soil, which produces an array of fruits, vegetables, and herbs that are used in the local cuisine.

From mouth-watering tacos to hearty stews, this town has a wide variety of dishes. Uruapan is home to traditional markets where visitors can find everything from fresh seafood to handmade tortillas.

One of the best options is the typical Mercado de Antojitos. Here you can enjoy atoles, white and red pozole, Michoacán-style carnitas, and a wide variety of tamales such as sweet tamales, ash tamales, corundas, huchepos, and nacatamales.

Another of the dishes that you can enjoy in Uruapan is the churipo, a red chile stew with beef and vegetables.

As for regional drinks, you must try a guacamaya, a refreshing avocado based drink mixed with rum and grapefruit soda.

“Churipo” Recipe

Ingredients for 12 servings:

  • 1 kg of beef for stew
  • 1 kg of beef jerky for cooking
  • ½ kg of zucchini
  • ½ kg of cabbage
  • ½ kg of carrot
  • ½ bunch of cilantro
  • guajillo peppers
  • pasilla peppers
  • salt to taste

Directions:

First you must cook the two types of meat. Once cooked, add the cilantro and the chile that was previously soaked and preferably ground on the metate.

Then the steamed vegetables are added and wait for both the meat and the vegetables to release their flavor.

Corundas can be added to the broth.

Serve it in a small clay pot that keeps the heat better.
