WHAT TO EAT IN FRESNILLO
In Fresnillo you can try many of the typical dishes of the state of Zacatecas such as the famous “asado de boda.”
This iconic dish is made with pork and various chilies and spices, as well as chocolate and bread.
Other regional dishes are: the enchiladas zacatecanas made with poblano chile sauce and stuffed with cream and cheese, or with Cuaresmeño chili sauce and stuffed with asadero cheese. Other important dish is tacos envenenados filled with potatoes, cheese, chorizo and beans and are accompanied with lettuce and tomato, birria de borrego, made with lamb or mutton and queso de tuna (sweet obtained from the concentrated juice of a kind of nopal).
Perhaps one of the most outstanding delicacies in Fresnillo is the gorditas de horno, which, although served in a small place, is one of the essential stops when you visit this city. The gorditas are stuffed with beans, mole, shredded meat, pork rinds, rajas, and cheese.
If you want something more sophisticated, there is the caldo de rata that is made with carrots, pumpkin, broccoli, xoconostle, corn, chipotle, corn and, believe it or not, rats, the difference is that they are field rats.
As for drinks, you can try the colonche that is made from red tuna, it has a texture similar to pulque and an acid flavor. There is also the Tejuino that is made from fermented corn, dough, sugar, salt, baking soda, and lemon.

“Enchiladas Zacatecanas” Recipe
Ingredients:
- 18 tortillas
- ¼ kg pork loin
- 6 poblano peppers
- 1 garlic
- ¼ onion
- 1 cup of cream
- 1 cup of crumbled fresh cheese
- 1 lettuce
- oil
- salt to taste
Directions:
Cook the meat with garlic, onion and salt. Once cooked, let it cool to shred it and fry it.
Devein the chilies and grind with the cream. Put the sauce on the fire and add half the cheese. When it comes to a boil, remove from the heat and keep the sauce hot.
Fry the tortillas, dip them in the sauce and fill with the shredded meat. Fold tortillas, do not roll them.
Plate the enchiladas by putting the leftover sauce on top. Garnish with lettuce leaves and the remaining cheese.
They can be served with rice.
