Recipe for Chipotle Peppers Stuffed with Cheese

Ingredients:

  • 8 large dried chipotle peppers 
  • 400 grams of panela cheese cut into rectangles 
  • salt and pepper to taste 

Batter 

  • 8 eggs
  • 53 grams of flour
  • 1 teaspoon salt

Directions:

Roast the chipotle peppers for 30 seconds on a griddle over medium-low heat. Then immediately immerse them in boiling water.

Soak the peppers for 20 minutes, after this time cut off one end to remove the seeds and devein them.

Season the panela cheese pieces with salt and pepper and stuff them into the peppers. Set aside. 

Separate the egg whites from the yolks and set both aside.

Beat the egg whites until soft peaks form; add the flour, salt, and beat until incorporated. 

Add the yolks to the whites and fold gently until incorporated. 

Cover the stuffed chipotle peppers in the batter and cook immediately in hot oil at 180°C. Cook the peppers on both sides until they turn a uniform golden color.

Place the fried peppers on kitchen paper to remove excess oil.

Serve the stuffed peppers with guacamole and rice.
