WHAT TO EAT IN EL ORO

It is a place with a rich gastronomy where you can enjoy mole with turkey meat, barbacoa and carnitas.

You can also savor some delicious tamales de judas, made with blue corn and kneaded with piloncillo honey. It is a dish that is served mainly during Lent.

Their local drink is known as “chiva”, which is made by hand with aniseed and a mixture of herbs, and which according to the locals is used to “cure yourself from fear”.

Another of the best-known drinks in the region is the atole agrio, which has its roots in pre-Hispanic culture and is served mainly during Holy Week. It is made with black corn ground on a metate and boiled with cinnamon and piloncillo.

“Atole Agrio” Recipe

Ingredients:

  • 1 kg of corn
  • ½ kg of sugar
  • 2 liters of water
  • cinnamon sticks to taste

Directions:

Wash the corn and leave it soaking in clean water overnight. The next day change the water and let soak one more night.

Grind the corn finely in a mill and add a little water.

Beat the mixture very well and pass through the strainer twice.

Serve in bowls and top each one with a tablespoon of heavy cream, avocado, panela cheese. Garnish with the squash blossoms and parsley (or epazote).To this mixture add the sugar and the cinnamon sticks. Cook and stop moving until thick.
