WHAT TO EAT IN TEPOZTLÁN

This Magical Town offers a great variety of typical Mexican dishes and very original creations.

One of the most representative are the itacates, which is like a gordita a distinctive triangular shape a filled with a variety of stews such as chicken or beef tinga, huitlacoche, chicharrón, grasshoppers, pumpkin flower, or cheese, to name a few.

Another tasty options are the tlacoyos, tortillas stuffed with beans generally served with sauce, cheese, cream and nopales.

You can also savor the red mole made with mulato, ancho and guajillo chili peppers served with turkey, or the famous cecina from Yecapixtla, a nearby town, which has become famous throughout Morelos because the preparation of this meat is an authentic ritual with a unique flavor.

The market is an obligatory visit, here you can savor the typical dishes and on Sundays there is a local crafts corridor.

Las Tepoznieves is something not to be missed with more than 100 flavors, it is quite an experience for the palate. They have several categories, Gods Sorbets, Traditional Sorbets, Water Sorbets, Sorbets with wine, Spicy Sorbets, Garden Sorbets and Diet Sorbets, so you will surely find a sorbet that you will fall in love with. Among the flavors are: cajeta, cappuchino, blueberry, cheese, rice, corn, apricot, mint, passion fruit, coconut, pickled strawberry, piña colada, fig with mezcal, chamoy, nopal, celery, beets... an endless variety.

“Itacates” Recipe

Ingredients for 8 servings:

  • 1 kg of dough for tortillas
  • 1 cup of grated cheese
  • ½ cup of lard
  • salt to taste

Ingredients for the stuffing:

  • 1 bunch of pumpkin flower or 200 grams of mushrooms
  • ¼ onion
  • 1 clove of garlic
  • serrano pepper slices to taste
  • oil to taste
  • salt to taste

Other Ingredients:

  • sour cream
  • fresh grated cheese
  • chopped lettuce
  • red or green sauce

Directions:

Mix the dough for tortillas with the cheese and butter. Season with salt.

Form triangles with the dough that are one centimeter thick and 10 cm long.

Cook on the griddle over medium heat for 5 to 7 minutes on each side, or until cooked.

To prepare the filling, put oil in a saucepan, heat and add the onion and season. Put the garlic and move until the onion is transparent.

Add the squash blossoms or mushrooms, along with the sliced chili. Season and let the liquid be consumed.

Open the itacates and fill with the stew.

Serve with cream, cheese, lettuce and the sauce of your choice.
