WHAT TO EAT IN XOCHITEPEC

The traditional cuisine of Xochitepec, like much of Mexico, uses corn as a fundamental ingredient.
 

Among the area’s most distinctive dishes are: Xochitepec-style white pozole, celebrated each November with the Pozole Fair. 

Another dish that has been adopted by this town, adding its own unique flavor, is meat mixiote (made with lamb, rabbit, pork, beef, or fish). This dish is made by seasoning the meat with chili and wrapping it in a special paper from the maguey leaf, then steaming it, adding bay leaves, thyme, oregano, marjoram, and epazote. 

You’ll also find traditional tlacoyos, goat barbacoa, and clemole seasoned with wild plums or tamarind.

In the community of Atlacholoaya, you can savor nejos or bean tamales served with either red mole or green pepita mole; this green mole is unique due to its base of corn husk strips, setting it apart from other moles.

A must-try during your visit to Xochitepec is the local ice cream. In July, the Cultural and Culinary Ice Cream Festival takes place in Alpuyeca. Here, you can enjoy a wide variety of ice cream flavors while taking in cultural and sporting events.

Recipe for Clemole Morelense

Ingredients:

  • 500 g beef shank   
  • 500 g beef ribs 
  • 2 cloves of garlic
  • 1 onion
  • 2 bay leaves
  • 9 tomatoes
  • 2 serrano chiles
  • 1 coriander bouquet
  • 3 corn cobs
  • 3 zucchinis
  • 2 chayotes
  • salt to taste
  • pepper to taste

Directions:

Season the meat with salt and pepper.

Sear the meat in a pot with oil.

Add the garlic and half an onion, frying until lightly golden, then add enough water to cover. Add the bay leaves.  

Blend the tomatoes, half an onion, chiles, cilantro, and a little beef broth.

Add the sauce to the beef broth 20 minutes after it starts boiling.

Cut the corn cobs into large pieces and add to the broth. 

Cut the zucchinis and chayotes into large chunks and add to the broth.

Bring to a boil and serve with chopped onion and lime.
