WHAT TO EAT IN PÁTZCUARO

Patzcuaro has made important contributions to the regional gastronomy, mainly because its indigenous heritage, its location by the lake and its products such as the Patzcuaro white fish.

This is a kind of fish endemic to the Lake Patzcuaro; you should not miss this delicious fish, prepared in numerous different ways by the locals. Michoacan has a wide variety of dishes, it is known as one of the most diverse cuisines in Mexico. You shoud visit the market in Patzcuaro, it is always a nice experience where you can try the local cuisine and taste the authentic flavor of the traditional hand made tortillas or other typical delicacies like the “carnitas”, (little meats), shoulder of pork that's been seasoned, braised until tender with lard and herbs.

In your visit to this Magic Town you can try the mouthwatering specialties like: Tarascan Soup, made from bay beans, chicken broth, tomato, fried tortillas and chili; “corundas” and “huchepos”, typical tamales of the Michoacan gastronomy; “enchiladas placeras”, filled with chicken, potatoes and carrots and topped with guajillo chili sauce; “boquerones” small charales coated in wheat flour and fried, a typical dish prepared along the shores of the lake; “michi” soup, made with vegetables and milk; “churipo” or “bote”, chili soup with beef and vegetables; “atapakua”, beef stew cooked with corn masa; and cold avocado chowder, soup made with the pulp of the avocado, chicken broth, cream and chili pepper, among many others.

Among its typical desserts are: “chongos zamoranos”, made of curdled milk; quince “ate”, very thick jelly made from the fruit of the quince tree, it can also be prepared with tejocote, guava, and other fruits; “capirotada”, bread pudding made with bread, raisins cinnamon, piloncillo and cheese; banana cake; an of course the famous fruit sorbets like the ''pasta ice cream'' with a delicious caramel flavor, or the other options including corn, rompope, fig, tequila, quince, sweet potato, changunga, guanábana and zapote.          

The typical drinks are: “charanda”, an alcoholic spirit similar to rum, derived from sugarcane; “rompope”, an eggnog-like drink made with eggs, milk, and vanilla; mezcal; white atole; and quince liqueur.

 

Gastronomy and typical cuisine in Pátzcuaro

White Fish Patzcuaro style Recipe

Ingredients for 4 servings:

  • 6 white fish fillets
  • 5 tablespoons lemon
  • 3 eggs
  • ½ cup of flour
  • ½ kg cooked tomatoes
  • 2 tablespoons vinegar
  • ¼ onion
  • 1 romaine lettuce
  • vegetable oil
  • salt to taste
  • pepper

Directions:

Add the lemon juice to the fish fillets then seasoned with salt and pepper.

Beat egg whites with salt till stiff peaks and add the yolks.

Heat the oil in a large non-stick frying pan over medium-high heat.

Put the fish fillet on the plate with flour and then dip each fish fillet in the egg.

Cook for 4 minutes or until it is golden, then flip the fish to the other side. Put the tomatoes in a blender and add salt, vinegar and chopped onion.

To serve the fillets are arranged over lettuce and on top of the fish you can add some lemon slices.
