WHAT TO EAT IN JALPA DE CÁNOVAS

The ingredients that characterize the cuisine of this beautiful Magical Town are quince and walnut, which is why many of its typical dishes include both ingredients.

So you can savor a rich walnut mole, a pollo en nogada (chicken with a walnut-based cream) or a delicious walnut cake.

You can also delight with a cecina de pollo (chicken meat salted and dried), caldo de zorra (broth with meat, xoconostle, tomato, onion, potato, coriander, garlic, salt and chile de árbol), patitas entomatadas (pork feet with red sauce), tamales de acelga, carnitas (slow braising various cuts of the pork in its own lard) and birria (meat stew).

Here you will find a wide variety of handmade sweets made with fruit and pan de cajeta (cake made with slow-cooked caramel sauce).

However, the most famous are the artisan sorbets of various flavors such as strawberry, currant, vanilla, tamarind, lemon and of course quince.

Another recomendation is to try the different fruit liqueurs and the delicious craft beers.

Gastronomy and typical cuisine in Jalpa de Cánovas

Pollo en Nogada (chicken with a walnut-based cream sauce) Recipe

Ingredients:

  • 1 chicken breast
  • ½ cup of walnuts
  • ½ teaspoon ground nutmeg
  • ¼ cup cream
  • ¼ cup of milk
  • 100 grams of cream cheese
  • 1 cup of cooked broccoli
  • salt to taste
  • pepper to taste

Directions:

Cook the chicken breast in a pot with enough water, add salt and pepper to taste and cover. When it is cooked, each half is placed on different plates.

Blend the rest of the ingredients and this will be the nogada (walnut-based cream) then covered the breasts with this sauce.

It is recommended to accompany with cooked broccoli with a generous drizzle of oil or melted butter.
