The regional food of San José Iturbide is a mix of Chichimeca and Otomi heritage.

“Gorditas de Carnitas” Recipe

Ingredients for 8 to 10 servings:

  • 300 grams of dough for tortillas
  • 300 grams of pork carnitas
  • 2 cups of green sauce
  • 1 tablespoon of lard
  • ½ cup of cream
  • 3 tablespoons of cilantro washed and chopped
  • salt to taste

Directions:

Finely chop the carnitas and mix with the dough and season with salt to taste. If necessary, add a little water so that the dough has the right consistency.

With the dough prepare thick tortillas with an estimated diameter of about 8 cm. They are placed on the hot griddle, turning them over until they are cooked.

Once cooked, a cut is made on the side and they are filled with the sauce and cream.

Another option is that, once cooked, the edge is pinched in such a way that a hole is formed where the sauce and cream are placed.
