WHAT TO EAT IN PAHUATLÁN

Pahuatlán offers an excellent cuisine.

Here you can taste the acamayas (kind of fresh water prawn), delicious tamales and of course the mole poblano.

Other delicacies of the town are the corn tamales and the pascal tamales, made with beans and peanut sauce, as well as taco placero that is made up of enchiladas, tlayulas (oversized corn dough tortilla), itacates (a type of taco that uses fried cheese as the wrapper rather than a tortilla) and meminques made with chickpea and bean, accompanied with some chicharrón stew or pork or beef sanchochado.

Undoubtedly the most representative dish of Pahuatlán is the chicalas or chicatanas, fried ants eaten eggs or pork with tortillas and sauces. Typically, the chicatanas appear during the rainy season.

High-quality coffee is produced, like other towns in the region. If you are interested in learning more about the cultivation and process of coffee, you can visit a coffee farm, where you will receive a broad explanation about coffee production and how to taste this delicious beverage.

If what you prefer is a stronger drink you can taste some wines made from distilled sugar cane and local fruits like acachul (small wild fruit similar to capulin), pineapple, blackberry, wild grape and quince.

Gastronomy and typical cuisine in Pahuatlán

“Salsa de Chicatana” Recipe

Ingredients:

  • 250 grams of chicatana ant previously toasted
  • 150 grams of dried chile de árbol
  • 6 garlic cloves
  • 1 onion
  • ½ kg of tomato
  • oil
  • salt to taste

Directions:

Heat the oil in a skillet and add the chiles, tomatoes, garlic and chicatana ants. Stir to blend flavors for 5 to 7 minutes. Remove from the heat and take out the chiles to soak them in water until they soften.

Blend the chiles and return them to the pan. Add the finely chopped onion. Wait for the onion to soften. Add the ant mixture and fry for approximately 10 minutes over low heat. Season to taste.
