WHAT TO EAT IN HUAUCHINANGO
Huachinango gastronomy is a mixture of indigenous and Spanish cuisine.
Being part of Puebla, you can savor a good variety of soups, broths, stews, and drinks.
Among its typical dishes are: pollo en hongo (chicken and mushroom), chicken and pork mixiotes, chicken in chitepin, pollo encacahuatado (chicken meat immersed in a sauce of peanuts and spices) as well as marinated pork and of course the mole poblano.
When you visit Huauchinango, be sure to try the papatla leaf tamales, a typical dish of the Cuacuila community. You can also taste some delicious tlacoyos and some quelites in green sauce.
Gastronomy and typical cuisine in Huauchinango
“Pollo en Hongo” (chicken and mushroom casserole) Recipe
Ingredients:
- 6 pieces of chicken
- 1 white onion
- 2 guajillo chiles
- 2 cloves of garlic
- 3 tomatoes
- 1 branch of epazote
- 300 grams of mushrooms
- 3 tablespoons olive oil
- salt to taste
Directions:
Cook the chicken pieces in a large pot with water, half an onion and a little salt for 30 minutes.
Cut the tomatoes into quarters and the mushrooms into slices.
Cut the chilies and remove the seeds and veins. Sauté the chilies, the tomatoes cut into quarters, the other half of the onion and the garlic in the pan for 10 minutes. Let cool and grind in the blender.
Return the sauce to the saucepan where it was cooked. Add the chicken pieces, the epazote branch, a cup of the broth where the chicken was cooked and the mushrooms.
Let simmer for 10 more minutes.
Serve hot.
