WHAT TO EAT IN XICOTEPEC
n this Magical Town you can find a wide variety of snacks such as tostadas, enchiladas and much more. However, Xicotepec is known for its "molotes".
The molotes are a delight that you can try in various places in Puebla, but the ones in Xicotepec are smaller balls, practically the size of a bite, and their filling is a stew made with chicken or pork and tomato. They are generally accompanied by a rich sauce, either red or green.
The gorditas also have their version in this town, they are served in a deep dish bathed in red or green sauce and accompanied by cabbage, chopped onion and fresh cheese.
The Xicotepec breakfast consists of eggs in mora chili sauce accompanied by a fresh cecina (fried jerky).
Other dish that you can try here is pollo en chiltepín made with chicken served with beans with causasa, a herb from the sierra of Puebla that gives a unique flavor to the food.
Of course you must taste the rich coffee of the region, consideredhigh-quality coffee with a very aromatic flavor. You can accompany this delicious drink with some of its typical sweets such as jamoncillo (fudge made with whole milk, sugar, vanilla, cinnamon and baking soda), dulce de leche quemada (burnt milk candy), or sweets made with pepita (seeds of squash), peanuts, passion fruit, blackberries and many other fruits of the region.
In the Main Square you can enjoy frozen popsicles and calling your name from the freezer with peculiar flavors such as coffee, mamey, tres leches or avocado.

“Molotes” Recipe
Ingredients:
- 500 grams of nixtamalized corn flour
- 100 grams of wheat flour
- 1 teaspoon of baking powder
- 400 grams of shredded chicken
- 1 white onion julienned
- 200 grams of tomato puree
- vegetable oil
- salt to taste
- pepper to taste
- sauce to taste
- cream to taste
Directions:
Mix the nixtamalized cornmeal, salt, baking powder and wheat flour. Add a little warm water to form a dough. Also put a little oil or butter. Cover with a damp cloth and let rest.
For the chicken tinga. In a saucepan, add a little oil and sauté the onion cut in julienne strips and season with salt and pepper.
Add tomato puree and mix very well. Then add the shredded chicken and mix. Season and if necessary put a little more salt.
Take a portion of dough and once you have calculated the size you want, use the tortilla press and press the dough lightly.
Place the chicken mixture in the center ot the tortilla.
Close on the sides, completely covering the filling, pressing on the edges.
Fry in a pan with enough oil until golden. Remove and place on a napkin with absorbent paper.
Serve them with cream and sauce of your choice.
