WHAT TO EAT IN MAPIMÍ

The gastronomy of this Magical Town has a clear northern influence and offers several dishes that are worth trying.

Among the suggestions are: chicharrón with nopales (pork rinds with nopal cactus), pork with zucchini and corn, grilled cheese with ham and chorizo, menudo, lentil soup, pancita (traditional soup that's made with beef tripe), beef cuts with beans and gorditas.

One of its star dishes are the spicy enchiladas that you can savor in any of the establishments on Paseo Gastronomico Reforma, a perfect place to try a wide variety of appetizers.  

The typical drink of Mapimí is the Sotol served with small pieces of cinnamon, but here you can also find good tequilas.

Enchiladas Picosas Recipe

Ingredients:

  • 24 corn tortillas
  • 3 ancho chiles
  • 3 mulatto peppers
  • 4 tablespoons of butter
  • 1 white onion, peeled and quartered
  • ¼ liter of cream
  • 250 grams of fresh cheese
  • salt to taste

Directions:

Put the chilies to toast and devein them perfectly well one day before. Leave them overnight in water with a little salt.

Blend the chiles with a little water and fry them with a tablespoon of butter.

Dip each of the tortillas in the sauce.

Place the rolled tortillas on a plate and bathe them with cream, cheese and chopped onion.

Pour the rest of the sauce over the enchiladas and serve.
