WHAT TO EAT IN CIUDAD VICTORIA
Due to its geographical position Tamaulipas has been able to integrate a series of cultural influences.
These influences come from different regions of Mexico and other countries.
In this region you can find a wide variety of Asadero cheese (asadero meaning "for grilling") served in tortillas accompanied by fried chiles and onions.
However, one of the typical dishes are the gorditas de masa de maíz, which are stuffed with various stews such as Picadillo, pig roast in green salsa, machacado (dried meat usually spiced), nopales or cheese. It is a typical dish for breakfast, just like a guayín, the Tamaulipeco omelette.
Other delicacies that you can taste in Ciudad Victoria are the cabrito (young kid goat) in sauce served with charros beans, the cueritos de cerdo and the nopal prepared in soups, salads or stews.
As for sweets you can try the famous galletas huastecas known as pemoles. These cookies are made of cornmeal dough with old cheese, lard, milk and piloncillo.
As in the rest of the state you can enjoy the typical Sotol.

Guayin Tamaulipeco (stuffed omelette) Recipe
Ingredientes (dependiendo de las personas y el gusto):
- eggs
- onion
- tomatoes
- green chile
- beans
- tortillas
- salt to taste
Directions:
Beat the eggs perfectly well. Bring your pan to a high heat and add oil so that the mixture doesn't stick. For an omelette with a "closed" texture, keep rocking the pan until most of the egg has solid.
In the center place the beans, the amount is to taste, and the omelette is closed. For the sauce, Place tomatoes into a large pot over medium heat. Simmer for 1 hour, skimming off any excess liquid or foam as necessary.
Stir in vinegar, bell peppers, onion, both sugars, chile peppers, lime juice, and salt. Reduce the heat to low and simmer until liquid reduces and sauce thickens, 3 to 5 hours. Adjust seasonings to taste. The guayín is served with the chili sauce.
