WHAT TO EAT IN OCOZOCOAUTLA DE ESPINOSA

Ocozocoautla boasts incredible cuisine, combining tradition and innovation. Its rich culture is reflected in culinary creations using fresh ingredients and ancestral techniques.

Typical regional products include fcorn, beans, chili, cocoa, and a wide variety of fruits and vegetables, which form the basis of many traditional dishes.

Some of the typical dishes are: “cochito horneado”, baked pork marinated with a spice blend; “chanfaina”, a meat stew with a thick sauce; chipilín soup, made with local chipilín herb, giving it a unique and fresh flavor. Chipilín is also used in delicious tamales available in this town.

You can also enjoy the typical sweet made from piloncillo and pumpkin seeds, and a rich pozol, a drink made from corn and cocoa.

Gastronomy and typical cuisine in Ocozocoautla de Espinosa

Chipilín Soup Recipe

Ingredients:

5 Servings

  • 50g Chipilín leaves
  •   liters of water
  • 2 corn
  • 250g tomato purée
  • 250g white onion
  • 1 chile serrano, chopped
  • 200g cream cheese
  • 200ml cream
  • 200g flour
  • salt to taste

Directions:

Cook the tomato, chili, onion, and salt over medium heat.

Blend the ingredients without adding water.

Add the cream cheese to the mixture and blend again. Set aside.

Heat water in a large pot. Once boiling, add the chipilín leaves and two sliced corn cobs. 

Form small dough balls about 2 cm in diameter.

Add the balls to the boiling water. 

Add the reserved vegetable paste.

Stir and cook for an additional five minutes over low heat, covered. 

Serve with cream and a sprinkle of grated cheese on top.
