WHAT TO EAT IN TAPALPA

Tapalpa is famous for its “borrego al pastor”, seasoned and marinated lamb .

It is said that the secret is in the oranges that are used to marinate it and the oak wood that is used to cook it. We suggest you accompany it with frijoles charros (beans stewed with onion, garlic, and bacon).

Other delicious dishes that you can enjoy are tamales de acelgas and enchiladas.

If you want to try something a little more exotic there is a restaurant that offers various dishes made with wild boar meat, from burgers to sausages.

The fresh cheeses in Tapalpa are a must-try.

As for dessert, you can taste borrachitos, jamoncillos, cajetas, however, the star is pegoste de durazno, a sweet that is a little thicker than the jam made with peaches.

About the typical drinks, you should try the ponche de granada (pomegranate punch) or the local rompope (drink similar to eggnog). Look for the most traditional rompope flavors such as almonds, walnuts, and coffee, but according to the local the pistachio is the best option.

The main square is surrounded with several options where you can enjoy the typical dishes.

“Borrego al Pastor” Recipe

Ingredients:

  • 1 kg of lamb
  • 3 onions
  • 4 cloves of garlic
  • 2 bay leaves
  • 1 glass of white wine
  • 1 tablespoon of sweet paprika
  • olive oil the necessary
  • salt to taste

Directions:

Chop the lamb and place it in a casserole along with the chopped garlic and the oil.

Fry until it takes on a little color. Flip and add the wine.

Add the rest of ingredients.

Cover with water and cook for 2 hours.

You can also do it in a domestic oven, although it takes more time.
