WHAT TO EAT IN TLATLAUQUITEPEC

You cannot visit Tlatlauquitepec and not eat a delicious tlayoyo prepared with corn dough and stuffed with alverjón, beans or potatoes and of course complemented with a rich green or red sauce.

Other local delicacies are carne ahumada (smoked meat), totole or turkey with mole, chilpozonte a meat stew with vegetables, carne ahumada (smoked meat) and garnachas with potatoes or beef.

The chileatole with criollo corn is another must-try in Tlatlauquitepec. You have the option to choose between chicken or pork, both are very good.

If you like the desserts you can enjoy the delicious crystallized figs, gaznate (cylinders of fried pastry, filled with creamy meringue paste), dulces de lech (milk sweets) or sweet potato bread with figs.

This Magical Town is famous for its delicious fruit liqueurs, including the famous Yolixpa, that combines up to twenty various herbs with a base spirit, typically a type of aguardiente distilled from sugar cane. It is considered a medicinal drink and a health remedy that helps with various ailments.

“Chipozontle” Recipe

Ingredients for 10 servings:

  • 4 skinless chicken drumsticks
  • 4 chicken thighs
  • 5 chipotle chiles
  • 5 tomatoes
  • ¼ onion
  • 2 cloves of garlic
  • 3 pepper leaves
  • 1 corn
  • 1 choyote (chayote root)
  • 1 chilacayote
  • 2 peeled, boiled potatoes
  • 1 stick of cinnamon
  • 2 cloves
  • 1 cup of lard
  • 2 liters of water
  • 2 epazote leaves

Directions:

Heat the water with salt and the 3 pepper leaves. When boiling add the chicken pieces.

Roast the chiles on a griddle along with the tomatoes, onion, cinnamon, cloves and garlic.

Fry the roasted ingredients in hot lard and grind. Add the chicken broth passed through a strainer.

Peel the chayoteste and cut into slices and add to the broth.

Peel the potato and cut into slices and add to the broth. Also put the chilacayote and the sliced sweet corn.

Once the corn is cooked, add the 2 epazote leaves and correct the seasoning.

Serve with tortillas and a lime.
