WHAT TO EAT IN LA PAZ

The cuisine in this destination offers exotic and delicious fish.

The coastal waters surrounding the peninsula have more than 850 different species of fish and molluscs, and this diversity gives the regional chefs an enormous amount of options.

 

The oregano and damiana, a sweet liqueur is produced that is said to have aphrodisiac properties, are two of the most important ingredients in the regional cuisine.

 

Some of the typical dishes are: lobster “macahaca, fish “chorizo”, pescado, marlin fish balls, stuffed chocolate clams, chocolate shrimps, shrimp fillet, oysters, shrimp tacos and “tatemado” fish.

 

Regional sweets are represented by jellies such as “guayabate”, “mangate” and “pitahayate”. Also famous are the dates, green papaya and fig preserves. Other favorite desserts are cheese empanadas and bread of egg.

 

You can also enjoy tasty cheeses and the traditional “quesadilla” with flour tortilla.

Shrimp Imperial Fillet Recipe

Ingredients:

  • ½ kg of medium shrimp
  • ¾ kg bacon
  • ½ kg of cheddar cheese
  • 1 green bell pepper
  • 2 tablespoons butter
  • 3 chives
  • 2 parsley
  • pepper to taste
  • oregano
  • 1 cup of olive oil
  • 1 cilantro
  • 1 tablespoons of chicken seasoning
  • 1 garlic clove
  • 1 lemon
  • 2 tablespoons of apple cider vinegar
  • salt to taste
  • toothpicks

Directions:

Scrub chocolate clams under cool running water. Discard any gaping clams that don't close when cleaned. Lightly steam clams to open. Set aside.

Peeled and boil the shrimp. Butterfly the shrimp along the back, open up the back in the same swoop you use for removing the vein anyway. Hold the shrimp between your thumb and forefinger, set the paring knife right at the tip of the head and then drag it down lightly and carefully along the back side of the shrimp, from the head to the tail. As it opens up, you'll see a black vein appear, remove it.

A small strip of cheese the size of shrimp is placed on top of the haunch, closed and wrapped with a thin strip of bacon, leaving the part of the tail free. Place a toothpick to hold the bacon.

On the griddle or the pan add the butter, chives and chili and finally add the shrimp, cooked for a few minutes and add the chopped parsley.

Fry the bacon on both sides and removed from the heat.

Served with cilantro cream.

You can serve this shrimps with a green salad.
