WHAT TO EAT IN PALENQUE

Palenque has been able to preserve its traditions, and one way to show it is through its gastronomy.

In several local restaurants you can try the typical dishes of indigenous reminiscence such as the traditional corn or chipilín tamales and shote con momo (stew made with river snails, nixtamal dough and hierba santa leaves).

Other dishes that you can taste in Palenque are: chipilín cream, salpicón de venado (a shredded venison salad with lots of fresh vegetables), the delicious enchiladas from Palenque and cochito al horno (roasted pork).

You can also taste a delicious organic coffee of very good quality.

Gastronomy and typical cuisine in Palenque

“Enchiladas Palencanas” Recipe

Ingredients:

  • ½ kg of chicken breast
  • 100 grams of white onion
  • 4 cloves of garlic
  • 2 bay leaves
  • 3 liters of water

Ingredients for the mole:

  • 1½ liters of chicken broth
  • 4 garlic
  • 70 grams of mulatto chile
  • 70 grams of pasilla chile
  • 80 grams of wide chile
  • 50 grams of white onion
  • 80 grams of white bread
  • 20 grams of sesame
  • 50 grams of pumpkin seeds
  • 40 grams of peanut
  • 50 grams of almond
  • 120 grams of tomato
  • 60 grams of chocolate
  • 100 grams of plantain
  • 3 allspice
  • 23 grams of cinnamon
  • 3 grams of thyme
  • 3 grams of oregano
  • 100 grams of brown sugar
  • ground black pepper to taste
  • salt to taste
  • double cream cheese
  • tortillas

Directions:

Cook the breast with the garlic and bay leaf. Shred the meat and reserve the broth.

For the mole. Add oil in a large frying pan and fry the chiles, the bread, the plantain, the tomato, the onion and the garlic. Move constantly.

In another pan, add oil and brown the seeds, sesame seeds and peanuts. When everything is golden, blend the ingredients with the chicken broth.

In a saucepan, strain the mixture and cook over low heat, add the sugar and season with salt and pepper.

To serve, spread the tortillas with the mole, fill with chicken and a tablespoon of mole, roll into a taco shape, cover with more mole.

Accompany with Chiapas cream cheese and sliced white onion.
