WHAT TO EAT IN CALVILLO

Calvillo is the largest guava producer in Mexico and famous for its superb confectionery, typical dishes, and liqueurs made from this fruit.

Here is a must-visit a candy factory that is mostly made with guavas and other fruits from the region. You can also find guavas with chili and guava cajeta, as well as guava atole, guava sweet, guava flan and cheese empanadas with guava. Its delicious fruit sorbets are also famous.

Another of the delights of the town are the "chamucos", cinnamon breads made with two types of dough, one of sugar paste and the other that goes in the center is wheat flour, it has an incomparable flavor.

However, in Calvillo you can also taste the typical dishes of Aguascalientes such as carne tatemada (stew made from beef), San Marcos chicken, peasant soup, nopales with beans, stuffed gorditas, chile Aguascalientes, baked suckling pig and especially pork in guava sauce.

Guava Flan Recipe

Ingredients:

  • 3 eggs
  • 1 cup of white sugar
  • 1 can of condensed milk
  • 3 egg yolks
  • 1 can of evaporated milk
  • 6 guavas
  • 95 grams of cream cheese
  • oil to taste

Directions:

Coat the mold with vegetable oil using a napkin.

Heat a cup of sugar in a pan until it melts and turns into caramel and pour it over the mold that is going to be used for the flan.

Cut the guava tips, cut them in half and remove the seeds.

Grind the guavas in the blender with the evaporated milk, the yolks, the eggs, the cream cheese and the condensed milk.

Pour the blended mixture over the caramel in the mold.

Place the mold in a pressure cooker with water covering half the height of the mold.

Cover the mold with aluminum foil. Seal the pot and heat over high heat until it starts to hiss. Lower the heat and cook for 20 minutes.

Remove from heat and let cool in a bain-marie so that the flan does not go down.

If you don't have an express pot, you can bake it in a bain-marie at 160ºC for one hour and 20 minutes.

Unmold carefully passing the knife along the entire pan.

Refrigerate at least 30 minutes and serve.
