WHAT TO EAT IN TEZIUTLÁN

When you visit Teziutlán, be sure to try the typical dishes like: tlayoyos with unique flavor made with alverjón.

Other iconic dishes are: serrano peppers and avocado leaves and Chilposo, a spicy soup with guajillo chili, chicken, pork or beef, totolcoxca mushrooms or chayoteste which is the root of the chayote.

You can also try different appetizers such as gorditas or picadas (a thick corn tortilla with pinched sides), garnachas (thick corn tortilla topped with meat, sauce, cheese, onions, and other garnishes) and molotes (deep-fried, oval-shaped corn tortillas filled with various ingredients).

Other must-try dishes are the chilahuate tamales, jams of different fruits such as apple, pear or peach and rompope jelly.

The typical drinks in Teziutlán are fruit & herb infused liquor. Among the most famous are yolixpa, lemon balm, apple, pear, plum, and capulin wines, among others.

Gastronomy and typical cuisine in Teziutlán

“Chilposo” Recipe

Ingredients:

  • 1 kilo of chicken in pieces, washed and without skin
  • 5 guajillo chiles deveined
  • 1 chipotle pepper deveined
  • 3 tomatoes
  • ¼ onion
  • 20 green beans
  • 1 corn
  • 1 zucchini
  • 1 chayote
  • 1 potato
  • 2 peeled, boiled carrots, cut into cubes
  • 1 clove of garlic
  • 1 sprig of epazote
  • corn dough
  • salt to taste

Directions:

Cook the chicken with enough water and a little salt.

Chop all the vegetables into medium cubes and reserve.

Boil the guajillo and chipotle chiles until soft. Blend the chiles with the tomatoes, onion and garlic.

In this mixture add the chicken and when it is boiling add the epazote and the vegetables, starting with the corn, carrot and chayote. Boil for 10 minutes and add the green beans and the potato and finally the pumpkin.

To make the chochoyotes, mix the dough with a little oil and salt to taste and form small balls. Press your thumb into the center of each ball. Once done add them to the mixture of sauce, chicken and vegetables.

Rectify the everything is well cooked and the seasoning .

Serve hot with corn tortillas.
