WHAT TO EAT IN TEQUESQUITENGO
One of the most iconic dishes in Tequesquitengo is the “cecina de Yecapixtla” (salted, air-dried beef).
Morelos has something to offer for every palate and here you can enjoy a wide variety of typical dishes such as the “cecina de Yecapixtla” accompanied by delicious green enchiladas.
You can also enjoy barbacoa, mole verde de pepita de calabaza (pumpkin seed green mole) or Tlayacapan-style mole served with pork or chicken.
Something more regional are tortitas de Tzompanti coated in green sauce, pollo en cacahuate (chicken in peanuts), or the huaxmole, a beef stew with chili peppers.
Perhaps one of the most representative dishes of Tequesquitengo are the huilotas en escabeche (pickled quails). These are a kind of bird that is prepared in various ways including in green sauce, in guajillo sauce or in wine sauce.
Of course, you must try its delicious appetizers such as cheese, pumpkin flower and mushroom quesadillas, or the traditional esquites (grilled corn on the cob, usually spread with mayonnaise (or butter) and topped with crumbly cheese, chile powder, and lime juice).
As in many other places in the state, there are delicious ice creams and sorbets of different flavors such as nanche, tecojote, mamey, rose petals, amaretto, black sapote, figs with mezcal, and mango with chili, to name a few.
If you really like the sweets, you can travel 20 minutes to the town of Jojutla where you can try the delicious pan de nata and hot chocolate. The experince worth the trip.

“Huilotas en Guajillo” Recipe
Directions:
Wash and clean the huilotas before putting them to boil in 4 cups of water with onion and salt.
Once cooked, drain and fry.
Toast the chiles, soak them in hot water and grind them with the garlic. Add this sauce to the fried huilotas and add the broth where they were cooked.
Boil for a few minutes.
Serve hot.
The “huilotas” can be accompanied with beans and freshly made tortillas.
