WHAT TO EAT IN ATLIXCO

The gastronomy of Atlixco is renowned for its variety.

Among its most acclaimed dishes are: cecina atlixquense, consommé atlixquense, fried grasshoppers with lemon and salt, tlacoyos served with cheese, cream and sauce and the barbecue.

The enchiladas, as in many other places in Puebla, are also important, you can try them bathed in green, red or mole sauce, accompanied by avocado, cream, lettuce, radish and onion.

If you are one of those who like to discover the flavors of the places, you can also visit the Benito Juárez market, where traditional bread is made in adobe ovens.

You can also enjoy the placero tacos filled with a wide variety of stews such as hard-boiled eggs, tinga, pressed pork rinds, nopales with egg, marinated pork rib and sausage, among many others.

If you want to sabor something sweet, you can try its delicious ice cream with such original flavors as chile en nogada, pinole and grasshopper, to name a few.

As for drinks, you can enjoy the rice atole and the chileatole.

Gastronomy and typical cuisine in Atlixco

Consomé Atlixquense Recipe (Broth)

Ingredients:

  • 2 chicken breasts
  • 250 grams of cheese cut into squares
  • 2 avocados
  • 2 chipotle chiles
  • 2 cloves of garlic
  • 1 piece of onion
  • salt to taste

Directions:

Cook the breasts in water with salt, onion and garlic.

Chop the chipotle pepper and add a little chicken broth. Season to taste and remove from heat.

Serve the strained broth with the quesillo and with bits of avocado.
