WHAT TO EAT IN VILLANUEVA
Villanueva offers a wide variety of dishes.
Among the delights not to be missed are: birria, menudo, dried meat, chorizo tortas, tamales, pulque bread, fish broth, curd gorditas, and frilojes condoches, a type of wheat gordita.
One must-try item in Villanueva is the typical huicholas, a regional bread made with wheat flour, sugar, and honey.
Among the sweets are delicious pumpkin candies, but the most notable are the traditional ice creams available around the main square.

Recipe for Curd Gorditas
Ingredients:
For 8 servings
- 1 kilo of tamale dough
- 1 ½ 1 ½ cups of curdled milk
- salt to taste
Filling for Savory Gorditas:
- grated aged cheese
- fried poblano chile strips with onions
- refried beans with chipotle or another spicy chile
- fried chorizo
- pickled vegetables and chiles
- grated aged cheese
Directions:
Mix the dough with the milk (previously curdled with a drop of rennet available at pharmacies).
Knead everything well and set aside the dough to be used for the savory gorditas.
With this dough, make thick tortillas, add the desired filling, and then shape them into cocol (a type of bread).
Place them on a greased baking tray and bake in a preheated oven at 200°C for 20 minutes.
Let cool slightly and serve accompanied by the fried poblano chile strips, cheese, and pickled vegetables and chiles.
Sprinkle grated cheese on top.
