"Caguamanta" Recipe

Ingredients:

  • 3 kg of stingray fillet cut into medium squares
  • 2 sticks of celery in small pieces
  • 3 carrots cut into small squares
  • 15 green beans cut into small pieces
  • 3 medium tomatoes
  • 2 cans of tomato puree
  • 1 tsp dried oregano
  • 1 pinch of cumin
  • 2 shrimp stock cubes
  • 6 tablespoons of cooked and blended pasilla chile
  • 1 tablespoon of strained flour
  • 1 tablespoon of lard
  • 6 peeled garlic cloves

Directions:

Put the manta ray already cut into pieces in hot water and then give it a cold water bath, repeating this process twice.

Blend the tomato, the puree, the oregano, the cumin, the shrimp cube and the pasilla pepper.

Put the lard in a pan and add the garlic, until garlic begins to turn lightly golden, take them out and add the blended mixture and boil for five minutes.

Cook the celery, carrot and green beans in enough water to leave some broth. Add the stew and once it boils for the first time, add the manta ray and let it boil for another 10 minutes.

You can add the jalapeño pepper, if you like it spicy.
