WHAT TO EAT IN TLAYACAPAN

On your visit to Tlayacapan you must try the green pipián mole, the red seed mole, tlacoyos filled with broad bean and beans and the turkey with mole.

As in many places in the country, tamales have an important place in the local gastronomy. Here you can try white beans tamales, and ash tamales, which are also known as tamales nejos.

One of its most representative dishes are the quesadillas de chales (fried pork rinds).

If you are looking for something sweet, you should try the traditional pan dulce de pueblo (village sweet bread), what makes it unique is that it is baked in a stone oven and the flavor is totally different.

Gastronomy and typical cuisine in Tlayacapan

Ash Tamales Recipe

Ingredients:

  • 2 kg of corn
  • 2 kg of ash (ashes from the wood-fire stove)
  • 50 grams of lime
  • 10 liters of water for nixtamal
  • 1 liter of water for the dough
  • salt to taste
  • corn or banana leaves.

Directions:

Place the corn in a pot and add the water previously mixed with the ash and lime.

Place the corn to cook. Once cooked, let it rest for two hours or until it cools completely.

Once ready, the corn will be rinsed thoroughly to discard the ashes and then ground to make the masa used for tamales, giving a particular look and taste to this dish.

Mix the dough with a liter of water and add the salt.

Put the mixture on the corn or banana leaf. Flatten and wrap.

Place the tamales in a steamer and cook for approximately one hour.

Once cooked, tamales de ceniza have a delicious smoky taste with a dense and smooth texture. They are usually served as a sort of bread with mole verde.
